In search of a fun, easy and healthy Thanksgiving dessert? Look no further than this pumpkin mousse recipe.

Not only is pumpkin tasty, it’s healthy, too. It’s a great source of beta-carotene, vitamin A and potassium. Beta-carotene is an antioxidant that can help prevent cardiovascular disease and cancer. Vitamin A promotes healthy vision, and potassium is an essential mineral that aids in regulating blood pressure.

Easy pumpkin mousse

Ingredients:

1 cup low-fat or fat-free cottage cheese

3/4 cup pumpkin puree

1/2 teaspoon pumpkin pie spice

1-2 tablespoons honey or maple syrup, to taste

1/4-1/2 cup low-fat milk (optional)

5-8 graham crackers, crushed/crumbled (optional)

Directions:

In a blender or food processor, mix the cottage cheese, pumpkin puree, pumpkin pie spice and 1 tablespoon of maple syrup or honey until the mixture is smooth and creamy (about 30 seconds to one minute)

If the mixture is too thick, add some of the milk and blend again. If needed, continue to add milk until reaching desired consistency.

Place in decorative serving dish and refrigerate for about two to four hours until chilled.

Before serving, top mousse with crushed graham crackers.
